This salad is steamed with flavor. Grilled chicken with char then mixed with Franks Red Hot Sauce. Burnt sweet corn, tender grilled onions, juicy sweet tomatoes, and creamy avocado. Everything about this salad you want to dip for a second bite or just shake your face in a bowl! I did not judge!

Talk about this buffalo chicken sandwich or salad if you want! We first talked about how I’m a diva at lunchtime. I’m a slave for a few hours for breakfast or dinner, but the most convenient food possible for lunch is popcorn, avocado, and eggs (wish I was kidding).

Buffalo sauce is personally one of my favorite spices. I love the flavor and the kick of the heat, it’s great.

This chicken salad is a little spicy, creamy, and crunchy – everything you want in a chicken salad. It uses a combination of mencho, fresh herbs, buffalo sauce, and spices to flavor buffalo wings dipped in ranch dressing. Read on for all the details on how to make this delicious chicken salad!

This recipe calls for more than two cups of sliced or diced chicken breast. One of the most common questions I have is how to make chicken for chicken salad. There are different ways to prepare chicken for this recipe and they are all great options.

List of some great ways to prepare your chicken:

Bone-in Roasted Chicken Breast – This is my favorite way to prepare chicken. I sew two bone-in chicken breasts with salt, pepper, avocado oil, garlic powder, and onion powder and then roast them at 400 degrees for about 40-45 minutes until fully cooked. Once they have cooled, I remove the skin, scoop the meat off the bones, and lift the meat.

Bake Boneless, Skinless Chicken Breast: If you have a boneless, skinless chicken breast on hand, this is another great option. Wash the chicken with oil and sew the breasts with garlic powder, salt, pepper, and onion powder. Bake it at 350 degrees for 15-20 minutes and until chicken is cooked through. When cool, dice the meat.

Poached Boneless Skinless Chicken Breast: If you prefer, you can cook the chicken breasts in boiling water until cooked.

Use Leftover Chicken – Another great (and easy!) The option is to simply use the leftover chicken from a roasted whole chicken. You can also use a combination of white and dark meat if you like.

Again – If you already have some leftover chicken, this recipe takes less than 5 minutes to make. It can also be adapted to your spice level.

In a rare turn of events, I highlight the spice (you’re welcome), but if you’re like me, when it comes to spontaneity, feel free to go heavy. Also, it turns out that Frank is a Red Hot Paleo and he’s actually very decent in terms of his ingredients. Not that it never stopped me from using it.

  • Preheat the grill to 400 degrees.
  • Pour the chicken cubes into the grill basket and grill for 4-5 minutes, until the mixture is slightly charred and the chicken is no longer pink.
  • Remove chicken from grill and place in a bowl with Franks Red Hot Sauce. Stir to coat the chicken.
  • Add corn slices and red onion directly to the grill. Grill the corn for 4 minutes per side and drain. Grill onion slices per side for 4 minutes until four-light marks are visible.
  • Cut the corn kernels off the cob.

Gather the salad: Evenly distribute the red leaf lettuce, roasted onions, cherry tomatoes, corn kernels, buffalo chicken, and avocado slices in four-leaf bowls. Inspire each salad with 2 tablespoons of rake dressing.
