Ingredients

3 cups cooked wild rice.

3 cups cooked chicken breast, cubed.

1/2 cup mayonnaise.

1/4 cup plain Greek yoghurt.

Lemon juice, 2 tbsp.

1 teaspoon lemon zest.

1/4 teaspoon salt.

1/4 teaspoon black pepper.

1/4 cup sliced green onions.

1/4 cup chopped water chestnuts.

1 cup halved red grapes.

1/4 cup slivered almonds, toasted.

Instructions

In a large mixing bowl, add mayonnaise, yoghurt, lemon juice, lemon zest, salt, and pepper.

Toss in the wild rice, chicken, green onions, and water chestnuts to coat. Refrigerate for 2 to 4 hours or overnight.

2 pkg. UNCLE BEN’S wild rice mix.

6 to 8 entire chicken breasts, poached and diced.

1 cup mayonnaise.

16 oz. Can artichoke hearts be chopped.

Sliced Pimentos, 4 oz. Jar.

2 c. celery, chopped.

1 cup chopped yellow, red, and green peppers.

1 pound Good Seasons Italian dressing made with simply oil and vinegar (no water).

Instructions

  • Prepare rice according to package directions, but use 1/2 cup less water. Mayonnaise should be mixed with the cooled rice and chicken.
  • Combine the artichokes, pimento, celery, and peppers with the salad dressing in a separate bowl.
  • Combine all of the ingredients. It can be made ahead of time and assembled just before serving.

3 1/2 cups cooked boneless skinless chicken breast diced.

3 cups wild rice cooked according to package specifications.

1 can 8 ounces sliced water chestnuts, drained.

1 cup seedless red or green grapes halved.

2/3 cup mayonnaise.
