Safeway Chicken Salad with Goat Cheese, Raspberries, and Pecans

 

Ingredients

Boneless, skinless chicken breasts. 1/4 pound.

45 ml of French vinaigrette.

Half a log of goat cheese, approximately 4 ounces.

1/4 cup of pecan halves.

1 package of raspberries (6 oz).

Spring mix, also known as mixed greens, comes in a convenient 5 oz package.

1/8 teaspoon of black pepper.

2 teaspoons of extra virgin olive oil.

Add 1/4 teaspoon of salt.

Instructions

  1. Dry the chicken with paper towels and place it on a cutting board. With precision, slice the chicken in half horizontally to create thin cutlets, ensuring the knife is parallel to the cutting board.
  2. Ensure that the chicken is properly seasoned with a generous amount of salt and pepper on both sides.
  3. Heat your grill pan, outdoor grill, or regular skillet over medium-high heat.
  4. After the pan is heated up, apply a layer of oil. Cook the chicken in a pan, grilling it on each side until it is fully cooked, which should take about 3-4 minutes per side.
  5. Meanwhile, make sure to wash and dry the mixed greens unless they were already pre-washed. Put it in a medium bowl.
  6. Prepare the raspberries by washing and drying them. Place in the bowl alongside the mixed greens.
  7. With precision and care, chop the pecans on a clean cutting board. Place the ingredients into the bowl.
  8. Once the chicken is fully cooked, carefully move it onto a cutting board and slice it into thin strips.
  9. Place the chicken and vinaigrette into the bowl, then gently mix to incorporate the flavors throughout the salad.
  10. For a delightful presentation, evenly distribute the salad onto plates or bowls, generously sprinkle crumbled goat cheese on top, and savor every bite!
