Let me show you how I recreated my favorite Starbucks oatmeal bars, combining these two loves! Oatmeal is simply delicious and I am a huge fan of oatmeal and anything to do with classic breakfast. So when I found this recipe that I adapted that looked like my beloved Starbucks oatmeal bars, I just had to try them and put them in my life! There is so much delicious food that I love there and Starbucks oatmeal bars are definitely at the top of my list!

These bars are ideal for breakfast or a mid-morning snack. Sometimes I even have them as a post-workout snack to refuel my body. Oatmeal is great for providing your body with many nutritional benefits, not to mention that it is a source of soluble fiber that is linked to good heart health. If you don’t eat oatmeal for breakfast, you’re missing out on a delicious way to add fiber and nutrients to your body first thing in the morning! My theory is that if they are healthy you can eat more than one and if they are cut small you can eat even more! They are definitely worth the calories, although they won’t do any real harm to your daily calorie intake! You must try these bars.

I know it’s only late spring, but I should really start figuring out what I want to make for my Christmas bake this year! (Surprise, you should make those Starbucks oatmeal bars by the dozen, if you’d like.) I always save it to the last minute, but this year, I swear, I’ll start early. You know how it is: you can plan whatever you want, but once that time of year comes around, forget about that plan!

Ingredients

  • 3.5 cups oats quick cooking
  • 1/2 cup butter unsalted
  • 1/2 cup light brown sugar packed
  • 1/4 cup corn syrup light
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325 F and line a 9 x 9-inch skillet with parchment paper.
  2. Grind 2 cups (using a food processor) of oatmeal until it looks like fine flour. Pour into a bowl and add the remaining 1.5 cups of unground oatmeal.
  3. Melt the butter, sugar, and syrup over medium heat until the butter is completely melted and the sugar dissolves. Remove from the heat and add the milk and vanilla extract.
  4. Pour the butter mixture over the oatmeal and stir until well combined. Pour the mixture into the pot and press the oats into the pot firmly and evenly. I used a metal spatula and pressed as hard as I could. Use cooking spray on the spatula if it sticks.
  5. Bake for 15 to 20 minutes until the edges are lightly golden brown. Let cool before slicing.
