Persimmons roasted with Greek yoghurt and pistachios.

  • 1 peeled and cut into wedges ripe persimmon
  • 1 tsp olive oil (extra virgin)
  • 1 cup greek yoghurt, plain
  • 1 tablespoon shelled pistachios, chopped
  • 2 tbsp granola (homemade)
  • Chia seeds, 1 tbsp.
  • 1 teaspoon of honey
  • sprinkle with sea salt

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit. Prepare a baking sheet with parchment paper.
  2. Toss persimmons gently with oil in a small bowl. Persimmon should be spread out on a baking pan. Persimmons should be soft but not mushy after 30 minutes of roasting. Before using, allow cooling completely.
  3. In a bowl, place the yoghurt: roasted persimmon, pistachios, granola, and chia seeds on top. Add salt and pepper to taste and serve with honey drizzled over the top.
