Preheat the oven to 375 degrees Fahrenheit. Prepare a baking sheet with parchment paper.
Toss persimmons gently with oil in a small bowl. Persimmon should be spread out on a baking pan. Persimmons should be soft but not mushy after 30 minutes of roasting. Before using, allow cooling completely.
In a bowl, place the yoghurt: roasted persimmon, pistachios, granola, and chia seeds on top. Add salt and pepper to taste and serve with honey drizzled over the top.
