  • Canola or vegetable oil
  • Two cups of flour
  • Baking powder, 2 tablespoons.
  • Baking soda, 1 teaspoon.
  • Two sugar teaspoons.
  • 1.5 teaspoons of salt.
  • Two cups of buttermilk
  • 2 eggs.
  • 3 tablespoons of butter, melted (you can use vegetable or canola oil).


  • Brushing the skillet with oil can help it to heat up.
  • In a bowl, sift the dry ingredients. Add the buttermilk, egg, and oil, beaten together in a different bowl, to the dry ingredients. You don’t want the gluten to tighten up, so be careful not to overmix!
  • Spoon 1/4 cup of pancakes onto the griddle using a measuring cup. Cook for approximately 2-1/2 to 4 minutes on each side before turning when the surface of the pancakes is covered in air bubbles.
  • Yields roughly 12 pancakes
