In a bowl, sift the dry ingredients. Add the buttermilk, egg, and oil, beaten together in a different bowl, to the dry ingredients. You don’t want the gluten to tighten up, so be careful not to overmix!
Spoon 1/4 cup of pancakes onto the griddle using a measuring cup. Cook for approximately 2-1/2 to 4 minutes on each side before turning when the surface of the pancakes is covered in air bubbles.
