The pasty figs or sweet figs are one of those desserts that represent the essence of our desserts: delicious and simple, just the ideal thing to give that final touch to a good meal. The figs are cooked in panela honey or brown sugar with spices such as cinnamon and cloves. Spices are optional (but recommended), and it is up to your taste whether or not you add them.

The process of preparing the figs is a bit long, almost three days: the first day the figs are soaked in water, the next day they are cooked and allowed to soak again throughout the day, and finally, on the third day, they are cooked with panela honey. I usually try to find the most efficient way to prepare a recipe. I like to find a way to keep things simple and fast, but in the case of moldy figs, it doesn’t work – you have to have a little patience.

I have tried to simplify the process, but the figs are dehydrated, so you have to be patient, but the result will be worth it – I promise you. The figs are served by slices or slices of quesillo or fresh cheese; it is very difficult to find quesillo in the US or Europe.

Fresh mozzarella cheese – the kind that comes in water – is a good replacement; you can also sometimes find in some markets a fresh cheese called “farmer’s cheese” that looks very similar to the Ecuadorian quesillo. Finally, I have to add that although the fig jam is perfect for dessert, they are also ideal in the afternoon with a good coffee.

Ingredients

  • 20 ripe but firm figs , washed
  • A pinch of baking soda
  • 1 ¾ lb of pan the piloncillo
  • Cinnamon, cloves and other spices – optional
  • Water

  • Quesillo or fresh cheese

Preparation

  • Make an incision or cross-shaped cut at the top – the narrow part – of each fig.
  • Put the figs in a bowl and cover them with water, let them soak for a whole day.
  • Sift the figs and put them in a pot, cover them with water, about 8 cups of water.
  • Add the pinch of bicarbonate and bring the water with the figs to a boil, cook for 15 to 20 minutes or until soft.
  • Leave the figs in the water in which they were cooked for another whole day.
  • The next day sift the water and drain each fig – delicately – until the greatest amount of water is removed.
  • Put the panela or piloncillo and the spices in a good size pot, add 6 cups of water and cook it over low heat until the panela is completely dissolved and begins to turn into honey.
  • Add the figs and continue simmering until the honey is thick, about 2 to 3 hours.
  • Serve the figs – hot or cold – accompanied with slices or slices of quesillo or cheese.
