Tacos With Mushrooms And Spinach



  • 8 tiny corn or flour tortillas
  • 2 cups sliced cremini or button mushrooms
  • 2 cups spinach, fresh
  • 2 minced garlic cloves
  • Toppings: crumbled queso fresco and chopped cilantro


  1. Cook the minced garlic in a pan until aromatic.
  2. Cook until the sliced mushrooms release their moisture and are fully cooked.
  3. Add fresh spinach to the pan and simmer until wilted.
  4. In a dry pan or microwave, heat the tortillas.
  5. Assemble the tortillas: Fill each tortilla with the mushroom and spinach filling.
  6. Garnish with crumbled queso fresco and cilantro, if desired.
  7. Serve right away.
