Tacos With Eggs And Chorizo

  • 8 tiny corn or flour tortillas
  • 4 large scrambled eggs
  • 1/2 pound (225g) chorizo sausage, casing removed
  • For garnish, use sliced onion, cilantro, and crumbled queso fresco.

Instructions

  1. Cook the chorizo in a pan until browned, dividing it into smaller pieces. Take out and set aside.
  2. Combine the scrambled eggs and fried chorizo. Cook the eggs until they are done.
  3. In a dry pan or microwave, heat the tortillas.
  4. Assemble the tortillas: Fill each tortilla with the egg and chorizo mixture.
  5. Serve garnished with chopped onion, cilantro, and crumbled queso fresco.
  6. Serve right away.
