Tacos With Beans And Cheese



  • 8 tiny corn or flour tortillas
  • 2 cups refried beans, cooked
  • 1 cup of shredded Cheddar or a Mexican cheese blend
  • Garnish with chopped lettuce, diced tomatoes, and sliced jalapenos.


  1. In a dry pan or microwave, heat the tortillas.
  2. Each tortillas should have a layer of refried beans on it.
  3. Top the beans with a liberal amount of shredded cheese.
  4. In a hot pan, heat the tortillas until the cheese is melted.
  5. Assemble the tortillas: Serve with chopped lettuce, diced tomatoes, and sliced jalapenos as garnish.
  6. Serve right away.
