Tacos De Huevos A La Mexicana

  • 8 flour tortillas, small
  • 4 big scrambled eggs
  • 1 small onion, chopped
  • 2 tomatoes, chopped
  • 23 serrano chilies, finely chopped
  • Toppings: chopped cilantro and diced avocado

Instructions

  1. Cook the chopped onion in a pan until transparent.
  2. Add the diced tomatoes and serrano chilies. Saute and cook the tomatoes until they soften.
  3. Add scrambled eggs and simmer until done.
  4. Heat the tortillas in a dry pan or microwave.
  5. Assemble the tortillas: Fill each with the huevos a la Mexicana mixture. Serve with chopped cilantro and diced avocado as garnish.
  6. Serve right away.
