This delectable chicken meal is crafted with fresh, flavorful ingredients that are bold, tangy, and healthful.


  • 1 pound boneless, skinless chicken breasts or thighs, cut into large, bite-sized chunks
  • 1/4 cup soy sauce (light) optional low-sodium tamari
  • 2 teaspoons honey
  • 2 teaspoons black pepper (more if desired)
  • 1 1/2 tbsp olive oil
  • Optional: 2 tablespoons ginger powder 1 tbsp ginger root, peeled and chopped


  1. Except for the chicken, whisk together all of the marinade ingredients. Put the chicken in a sealable bag or container and pour the marinade over it. Refrigerate for at least 30 minutes.
  2. Empty the chicken and marinade into a pan over medium heat and cook for 10 to 15 minutes, stirring periodically, until the chicken pieces are cooked through.
  3. Serve the chicken with the remaining sauce. Enjoy!
