PASTA SALAD FOR SUMMER

 

Ingredients

Scale
  • Celery stalks, chopped: 2. Orange bell pepper, seeded and chopped: 1. 
  • Small red onion, finely chopped: 1. 
  • Cherry tomatoes halved: 1 pint.
  • chopped cucumber: 1
  • 8 ounces of salami cut into 1/2-inch cubes.
  • 8 ounces of provolone, cut into 1/2-inch cubes.
  • One bunch of roughly chopped basil
  • 2 teaspoons of roughly chopped parsley
  • 2 tablespoons of roughly chopped dill.
  • Tricolor Tortellini, 1 pound, cooked as directed on the package, drained and cooled.
  • One cup of Hidden Valley Cucumber Ranch Dressing.
  • Two tablespoons of red wine vinegar.
  • Freshly ground black pepper and kosher salt, as desired.

Instructions

All ingredients should be combined in a sizable bowl and thoroughly mixed with the dressing. When ready to serve, serve right away or chill.
