Enoki mushrooms are a beautiful type of mushroom that is extraordinarily delicious! Here is a recipe to cook this delicious mushroom.
8 ounces enoki mushrooms (about 2 bunches)
2 tablespoons sesame oil (standard, unroasted)
2 medium garlic cloves
1 tablespoon tamari or soy sauce
For the garnish: chopped spring onion or spring onion
Remove the lower end of the root from the enoki stalks. Wash the mushrooms and pat them dry. Chop the garlic.
Heat the sesame oil over medium-high heat. Add the mushrooms and brown for 1 minute. Add the garlic and cook until soft and fragrant, about 30 seconds. Add the soy sauce and remove from the heat. Serve immediately as a garnish topped with sliced chives or scallions, or with soba noodles.
