Skillet of Mexican Beef

  • 1 pound extra-lean ground beef
  • 1 cup chopped onion
  • 14 ounces drained diced tomatoes
  • 1 1/2 cups corn (frozen)
  • 15 1/2 ounces drained and rinsed black beans
  • 1 tsp chile powder
  • 1 cup sour cream (fat-free)
  • 1/2 cup shredded low-fat cheddar cheese
  • You’ll need the following items:
  • Skillet (large)


  1. Brown the ground beef and onion in a large skillet until done.
  2. Add the black beans, corn, chiles, and tomatoes and mix well. Reduce heat to low and cook for 10 minutes. Stir once in a while.
  3. Add the sour cream and mix well. Cook for another 10 minutes. Stir once in a while.
  4. Serve with a sprinkling of cheese on top.
