Paleo Granola Bars Recipe: The best granola bars of granola and satisfying, packaged with a crunch of hazelnuts and simple and whole ingredients. Without gluten, vegan, paleo, rich in protein, without dairy products.

Dry ingredients
1 cup chopped nuts
1/3 cup unsweetened coconut chips
1/4 cup pumpkin seeds
1/4 cup golden ground flaxseed
Optional: 1/2 teaspoon ground cinnamon
1/4 teaspoon salt (optional)

wet ingredients
1 tablespoon coconut sugar
2 tablespoons melted coconut oils
1 tablespoon unsalted, natural creamy almond butter
3 tablespoons maple syrup

Instructions

  1. Pre-heat oven to 325°F. Place the granola bar pan on a large baking sheet to ensure stability in the oven. You can also line an 8-inch square baking dish with parchment paper or greased foil. The granola bars pan is my favorite because it makes a firmer bar with crispy edges and a crunchy exterior. Set aside for later.
  2. Mix all dry ingredients in a large bowl. Nuts, coconut, pumpkin seeds, and flaxseed are good options. Stir until well mixed.
  3. In a medium bowl, combine all the wet ingredients: coconut sugar, coconut oil, and almond butter. Mix until combined.
  4. Pour wet ingredients over dry ingredients. Use a rubber spatula to stir and fold the ingredients until well combined.
  5. Place the mixture in a granola baking pan or granola bar pan. To make the granola bars pan, scoop 3 tablespoons of the mixture into each crevice. To compact the mixture into a uniform, tightly packed layer, use a narrow spoon. Use the spatula to press the mixture down into a uniform, tightly packed layer for the square baking pan.
  6. Bake for 22-27 mins. My time was 25 minutes. To cool, place the granola bar pan + baking sheets or baking pan onto a cooling rack. Let cool for between 50-60 minutes or until firm. Next, take the granola bars out of the pan and place them on a cooling rack. For the baking pan, lift the parchment paper and the bars onto the cooling rack. Let cool for at least 2 hours. Cut into 12-18 bars (for the baking tin only). Enjoy! These are the instructions for Storing.
