For starters, who doesn’t love fried chicken? It’s probably the most famous comfort food in America (or maybe just the South). Lemon Pepper Seasoning adds lemon zest, a pinch of black pepper, and a classic onion-garlic combination to the already delicious crispy chicken wings.

Yes, you can, but with a catch.
You can prepare the chicken wings by preparing all the ingredients (cut the chicken wings, mix the flour layer, etc.) and store them until they are ready to fry. This is the method I recommend.
However, if you want to deep-fry the chicken wings and serve them later, keep in mind that you’ll need to be very careful when reheating to keep the chicken crispy. And even if done correctly, the exterior of the chicken wings may not fully experience the freshness of freshly fried chicken.
How long are fried chicken wings good for?
Once prepared, the fried chicken wings can be refrigerated in a sealed container for up to four days.
If you’ve made the lemon pepper seasoning, any extras you have can be stored in a sealed container at room temperature for up to two years.

For most foods, the overall rule of thumb is that a perishable item shouldn’t be within the “danger zone” for quite two hours. And for “danger zone”, it is usually at room temperature or just above. This time may vary counting on the ambient temperature.
After the two-hour window has passed, be sure to discard the wings or keep them in a sealed container in the refrigerator.

- Dip the top of a wooden spoon into the oil. If the oil starts to bubble around the wood, the oil is done.
Can I cook the chicken wings instead?
Yes, you totally can! Just place the chicken wings directly on a baking sheet (you can place the chicken on a cooling rack placed on top of the baking sheet).
When you’re ready to bake, there are three “ideal” time and temperature combinations for baking chicken wings, and they should all result in wings baked to perfection. The only real differences may be due to the unique calibration of your oven or the amount of time you have available to bake.
The three options are:
- 400 degrees F for 40-45 minutes (my personal favourite).
- 375 degrees F for 50-55 minutes.
- 350 degrees F for 55-60 minutes.
However, no matter what cooking time you prefer, always check your wings before you take them out of the oven. The juices should run clear and a meat thermometer should have the internal temperature to 165 degrees F. Also, be sure to check that the skin is browned and crisp to your liking.

This secret ingredient did not occur to me. It was apparently introduced by American Test Kitchen a few years ago. I am so thankful that they made it because these baked chicken wings are so crispy!
Baking Powder or Chemical Yeast
The secret to crispy baked chicken wings is to use baking powder and coat them well with it.
- Yes, baking powder. NO baking soda.
- I don’t know the scientific reason behind this so I did some tests with other combinations.
- The three tests I did were cornstarch only, cornstarch baking powder, and baking powder only.
- Just to see, you know. And yes, the baking powder won! 😉
- You’ll think it’s a super weird ingredient to use in this recipe (don’t worry, it sounded weird to me too, even so far 😀), but hey, it works!
- And another thing, also important, is that it does not leave you with a strange taste.
