Easy Mexican Chicken Casserole

Ingredients

  • 4 cups shredded chicken
  • 2 cups HERDEZ Creamy Cilantro Lime Sauce
  • 15.25 oz canned corn, drained (1 can)
  • 1 cup black beans, rinsed
  • ½ teaspoon garlic powder
  • 1 teaspoon of salt
  • ½ teaspoon cumin
  • 1.5 cups grated Colby Jack cheese (or Mexican blend)
  • Garnish (optional)
  • sour cream
  • guacamole
  • Green onions

Instructions

  1. Combine shredded chicken, salsa, corn, black beans, salt, garlic, and cumin and spread in a large saucepan.
  2. Top evenly with cheddar cheese.
  3. Bake at 350°F for 20 to 25 minutes or until cheese is melted and chicken is heated through.
  4. When done, remove from the oven and top with your choice of sour cream, guacamole, and green onions.
