When the weather starts to chill, everyone needs a healthy Chicken Soup Recipe. When you feel under the weather, there is nothing better than homemade chicken and rice soup. Warm homemade soup makes you feel better.

Ingredients

  • 1 TBSP. Avocado or Coconut Oil
  • 3 pieces of celery diced
  • 4 Carrots diced
  • 1 Onion diced
  • 6 cups Chicken Broth
  • 3 Cups of Water
  • 2 chicken breasts cooked and shredded. I used my Instant Pot
  • 1 teaspoon Pink Himalayan Sea Salt
  • 1/4 teaspoon 1/4 tsp.
  • 1 teaspoon Granulated Garlic
  • 1 Cup White Rice
  • 2 tsp. Parsley
  • 1/2 teaspoon Rosemary
  • 1/2 teaspoon thyme
  • 1/4 teaspoon Sage

Instructions

  1. Heat the oil in a stockpot.
  2. Add the celery, carrots and onion.
  3. Sauté the vegetables for 3 minutes
  4. Bring to boil the broth, water, and seasonings.
  5. Reduce heat to medium and cook the chicken for 30 minutes.
  6. After 30 minutes have passed, add the rice to the pan and continue cooking for another 15 minutes.
  7. Remove the cover and let the rice cook for approximately 5 minutes or until it is tender. Serve with your favorite crackers. Enjoy!
